Cornell Dairy Facts
The Cornell Dairy has operated on the Cornell Campus since 1880. It was first housed on the site where Bailey Hall is now situated, moved to Goldwin Smith Hall in 1893 and finally settled into its current location in Stocking Hall in 1923.
The Cornell Dairy functions as a working laboratory for the food science students who enroll each semester in one of the many courses taught in the Dairy using Dairy staff and equipment.
The Cornell Dairy employs food science students to give them practical experience and on-the-job training in food science.
The Cornell Dairy accommodates both applied and basic research by supplying raw and processed milk ingredients to researchers from Cornell, other institutions, and corporations.
The Cornell Dairy processes raw milk from Cornell's dairy herd into dairy products (milk, yogurt, ice cream) and supplies these products to the Cornell Dairy Store and Dairy Bar as well as to Cornell dining halls, the Statler Hotel, the Campus Store, Cornell's fraternities and sororities, and the cooperative housing units.
The Cornell Dairy participates in the Department of Food Science's extension program. This program serves both the dairy and food processing industries of New York and offers workshops and short courses.
The Cornell Dairy is a designated training facility for New York State Certified Milk Inspectors and New York State Department of Agriculture and Market Inspectors.
The Cornell Dairy is fully inspected and licensed under the jurisdiction of the New York State Department of Agriculture and Markets.
The Cornell Dairy works closely with and supports the work of the Food Processing and Development Laboratory of the Department of Food Science.
The Cornell Dairy is a favorite tour site for Cornell classes and for individuals and groups visiting the university from the Ithaca area, the United States and abroad.
The Cornell Dairy creates unique ice cream flavors from its own recipes and names these flavors in tribute to Cornell events and people; for example, "ChimesCream" in honor of the return of Cornell's much loved McGraw Tower bells following a year of refurbishment and "Nutty Buddy Franklin" in honor of Mr. Franklin Henry's forty years of dedicated service with Cornell Dining.
